Sonja Henie Cookies

These take a bit of messing around, but not too bad. This was originally Aunt Jean's recipe.

Ingredients

1/2 cup butter
1/2 cup brown sugar
1 egg yolk
1 cup flour, sifted
1 tsp vanilla
1 egg white, beaten
1 cup pecans, chopped
jelly (I prefer raspberry or currant)

Instructions

  1. Cream butter and sugar.
  2. Add egg yolk.
  3. Add flour.
  4. Mix well.
  5. Add vanilla.
  6. Make small balls of batter.
  7. Dip in egg white.
  8. Roll in chopped nuts.
  9. Place on cookie sheet and press down center before you put in oven.
  10. Bake at 300°F for 10 minutes.
  11. Press center down again and bake 10 more minutes at 350°F. (Yes, the baking temperature is different.)
  12. Put tart jelly in center after they come out of oven and before they cool.
